Loaded Potato Soup

Ingredients
- 2 cups bacon pieces
- 1 onion (chopped)
- 1 tbsp garlic (minced)
- 1/2 stick butter
- 1 tbsp flour
- 1 cup chicken broth
- 3 cups milk
- 2 cups heavy cream
- 1 tsp salt
- 1 tbsp Cajun seasoning
- 1 tbsp dry chicken bouillon
- 1 tsp pepper
- 6 potatoes (cubed)
- 1 package Boursin cheese
- cheddar cheese (freshly grated, sharp)

Cook bacon pieces in a large pot over medium heat until crispy. Remove bacon and set aside, leaving the rendered fat in the pot. Add chopped onion and minced garlic to the pot and sauté until softened, about 3-4 minutes.
